I am going Healthy this week! Again. Yes, I am finally joining the gym (tomorrow) and we are going to stop eating crap(today)!

So...I need some recipes. Can you please comment with your favorite - EASY - HEALTHY - DELICIOUS - Recipe, please!

Here is something very simple and healthy:

Chop an onion and a clove of garlic. Use a vegetable peeler to peel strips off a carrot and a zucchini. Chop two or three tomatoes. Cook all this in some olive oil -- maybe 1/4 cup -- for about 30 minutes, until the tomatoes fall apart and everything is juicy. Add thyme, basil, salt, and pepper. When it is done, serve it over pasta. You can always increase the ingredients' amounts to serve more people.

Some grated parmesan cheese is nice over this, and a pinot grigio would be a good wine match. Bon appetit!
